Ghaliyeh fish recipe Abadan food in Iran
Ghaliyeh fish is one of the main dishes of the people of Khuzestan, Bushehr and Hormozgan. Ghaliyeh Abadan fish is a stewed food that consists of fish, vegetables, garlic, onions and special spices. This food is cooked in a way similar to vegetable crumbs. Chop the fish into 4 by 4 cm pieces and wash. The fish used for Ghaliyeh fish must be boneless. For this reason, Shurideh, Sangsar, Humor, Halva and Siah fish are suitable for preparing this food.
INGREDIENTS :
- Fish: 700 grams
- Tamarind: 100 g
- Coriander: 400 grams
- Fenugreek: 50 grams
- Large onion: 1 pcs
- Garlic: 5 cloves
- Flour as needed
- Salt, red pepper, coriander powder, turmeric and curry powder as needed
INSTRUCTION :
Fry the roasted vegetables well and set aside.
Finely chop the onions and fry. When golden, add the chopped garlic and fry. Add spices to garlic and onion and continue frying. At this stage, some add a little paste to the ingredients. Of course, paste is not in the main recipe of Abadani fish roe.
Mix the roasted vegetables with the ingredients. Pour a little boiling water on tamarind. After a few minutes when the sour cream is dissolved in water, we strain it. Add sour cream juice to the ingredients and put it on the heat to drain the water.
Pour a little boiling water over the stew and reduce the heat. Leave the pot half open and let it cook for an hour.
Mix flour, turmeric and salt. Fry the fish pieces in the mixture and fry in hot oil.
Add the fried fish to the stew in the last quarter of cooking.
Fish roe is a stew that you can eat with bread without rice.
Do not forget to use boneless fish to cook this food. Fish such as: shurideh, stony, grouper, halva and black are suitable for preparing this food.
