Gilan stuffed eggplant recipe in Iran

- Eggplant = 1 kg
- Large onion = 1 piece
- Levigated walnuts = 250 grams
- Tomato paste = 1 teaspoon
- Pomegranate paste (or plum paste or pomegranate juice) = as needed
- Dried mint or chubby vegetables = as needed
- Angelica = as needed
- Salt and pepper = as needed
- Tomatoes = as needed
Instruction :
Peel the eggplants and fry them in a frying pan on a low flame until they are fried
After the eggplants, fry the tomatoes properly. When both are fried, let them cool.
Grate the onion and mix the pomegranate paste, walnuts, cloves, paste, angelica, salt and pepper.
Now gently tear the belly of the eggplant tomato with a knife and pour as much walnut material as you like.
Gently put the stuffed eggplant tomatoes in the pan again, add a little oil and let it sit on a low flame.
