Recipe for Gilan Keshta bread in Iran

ingredients :
- Sugar = 1 cup
- Salt = a small amount
- Purslane or fenugreek seeds (powdered) = 2 tablespoons
- Pumpkin (cooked) = 2 cups
- Flour (mixture of rice and wheat flour) = 7 cups
Instruction :
First, chop the squash into relatively large cubes and cook with half a cup of water, then peel it with a spoon and discard.
Mash the squash with a meat grinder and add flour, ground fenugreek seeds, salt and sugar and, if necessary, a very small amount of water until your dough is done.
Knead the dough well with your hands and leave it in the room for 2 hours.
Then prepare small balls, place the mud pan or non-stick pan upside down on the gas to heat.
Then spread this dough on a flat surface where you have sprinkled a little flour, first with the palms of your hands or with a rolling pin the size of a plate, and then place it on a hot plate that is on the heat.
It is better to put the lid on the bread for a few moments and remove it to steam a little, then both sides of the bread that is baked, the bread is ready.

In the eastern regions of Gilan, this bread is called portulaca bread or khalfa bread. The sweetness of this bread depends on everyone’s taste. If the pumpkin is sweet, we reduce the amount of sugar. The amount of wheat flour should be four servings and rice flour should be three servings.
