Gilan Rudbari shami recipe in Iran

INGREDIENTS :
- Beef = 400 grams
- Grated onion = 3 pieces
- Salt and pepper = the amount needed
- Chopped vegetables (tarragon, savory, basil, coriander) = 1 cup
- Oil = as needed
- Grated tomatoes = 500 grams
- Tomato paste = 1 tablespoon
- Olive oil = 2 tablespoons
INSTRUCTION :
First,Mix the minced beef with the onions and add the salt and pepper.
Add fragrant herbs to the ingredients and knead well by hand.
Leave it in the refrigerator for a few hours so that the aroma of vegetables penetrates the meat to make it more palatable.
Now take the size of a small tangerine from the meat and flatten it in your hand and pour some oil in the pan, fry the handkerchiefs in it and set it aside.
Fry the grated tomatoes with the paste in a little oil and add a spoonful of fragrant herbs to it. Add a little salt and turmeric and put it on a low heat until it boils and thickens.
Then put the shamis in the tomato sauce and reduce the heat. Put it in a bowl to cook slowly.
Finally add two tablespoons of olive oil.
