This is a delicious and fragrant local food called sour Aush Mazandaran in Iran, which is cooked as follows, and follow the cooking article of Koolleh magazine in the continuation of this article.

INGREDIENTS :

  • Salt and pepper = the amount needed
  • Oil = the amount needed
  • Flour = 1/3 cup
  • Plum paste = 1 tablespoon
  • Pomegranate paste = 2 tablespoons
  • String (Aush) = 750 grams
  • Beetroot (small) = 3 pcs
  • Garlic greens = 3 plants
  • Potatoes = 2 pcs
  • Lentils = 1/2 cup
  • Vegetables (including cloves, spinach, nettle and beets) = 1.5 kg
  • Pinto beans = 1 cup

INSTRUCTION :

First, saute the cloves and garlic and fry them in oil, half-boil the lentils and beans with some water. Then chop the rest of the vegetables and add to it.

Dissolve the flour with some water and add it to the rest of the ingredients. Chop the potatoes and lips and add to the ingredients.

Then add the noodles. Once the noodles are open, you can add the pomegranate paste and plum paste, then add the chopped garlic and cloves and let the Aush settle.

Other points
1) This Aush is the traditional food of Mazandaran province in Iran.
2) Be sure to soak the beans from the night before and change the water twice, and if you forget, boil it twice and empty the juice, and then cook.
3) If you do not have access to any of the vegetables, remove it and add it to the other vegetables.
