This delicious and fragrant local food called sartareh rice of Mazandaran in Iran is cooked as follows and follow the cooking article of Koolleh magazine in the continuation of this article.

INGREDIENTS :

  • Vegetables (including coriander, parsley, leek, spinach or beet leaves, sorrel and fresh nettle leaves) = 2 kg
  • Onion = 1 pcs
  • Garlic = 3 cloves
  • Tomatoes = 3 pcs
  • Eggs = 3 pcs
  • Salt and pepper and turmeric = the amount needed
  • Oil = the amount needed
  • Orange juice or lemon juice = the amount needed

INSTRUCTION :

First, chop the vegetables (leeks, spinach or beet leaves, dill, coriander, parsley, nettle leaves), garlic and onion and put them in a pot, then pour a glass and a half of water in it and peel the tomatoes. And add (or 2 tablespoons of tomato paste).

Add salt and turmeric and put the lid on the pot and let it cook over low heat. After about 40 minutes when the juice is completely taken, pour enough oil in it and fry.

Pour the eggs into a bowl, stirring or not stirring, on the stew and sprinkle the appropriate amount of pepper. Put it in the pot and the pilaf will be ready in about ten minutes. If you want, pour orange juice or lemon juice on it when serving pilaf. Enjoy your meal!

Other points
1- Be careful in vegetables, dill should be more than other vegetables and if you do not have any of the vegetables, remove it and add it to the others.
2- If fresh garlic leaves are available, use them.
3- Sartareh rice is eaten with chicken, fish, kebab with rice or bread and yogurt.
