Recipe for Sak stew Golestan food in Iran

INGREDIENTS :
- Raw Chickpea= 2 cups
- Pepper, turmeric and salt = as needed
- Meat with fat = 1 kg
- Flour = 1 cup
- Spinach = 2 kg
- Oil = as needed
- Garlic = a few cloves
- Onions = 2 pcs
INSTRUCTION :
Put the chickpeas in boiling water and when the chickpeas are boiling, add a small amount of baking soda to make it easier to peel (this is called raw boiling) after the chickpeas are cooked.
Peel a squash, grate it and cook with the meat.
After cooking some meat, pour the chopped spinach and onion into the meat pot to be cooked with the meat.
Then mix the flour with a little water and stir and pour into the stew to make the stew glazed.
Fry the garlic in some oil and add some turmeric.
Pour dry mint in some oil and make hot mint.
Then pour both of them into the stew and after a few boils, test the stew and taste the desired amount of salt and pepper and then remove from the heat.
Pour the prepared bag stew into the desired dish and garnish with a little hot mint and hot garlic.
