Perhaps this (considering food as a food for low-income families), has caused many of these delicious and nutritious foods today, not cooked at all or at a very low level, to be prepared and desired by Iranian families. A belief that is definitely wrong and unfortunately has grown very strong and strong in the minds of many people in the country. Leek shorbay, which is known in the beautiful dialect of the Azerbaijani people as Suzi Shorbasi, is one of the traditional and indigenous dishes of Azerbaijan province, which unfortunately has not escaped the bite of these beliefs and its cooking is almost forgotten. Fully nutritious, healthy and very tasty food that is a valuable source of calcium and protein needed by the human body due to the presence of leeks and eggs. The housewives of this vast and beautiful province of the country prepare and cook leek shorbay by combining ingredients such as eggs, cumin, leek vegetables, potatoes, high-quality Iranian rice, tomatoes, tomato paste, salt, pepper and turmeric.

INGREDIENTS :

  • Salt and pepper = the amount needed
  • Vegetables (leeks) = 200 grams
  • Onion = 1 pcs
  • Omani lemon = 3 pcs
  • Chickpeas = 100 g
  • Meat = 1 kg
  • Saffron = the amount needed
  • Turmeric = as needed

INSTRUCTION :

Choose a suitable dish and melt a little mutton tail or butter in it and divide the onions into 4 parts and fry them in it. Add the meat and fry until it changes color, then add the washed and drained cobs to the ingredients and fry a little. Then add 6 cups of water to the food and let your food cook.

After cooking the meat and coconut of the Omani lemon, add salt, pepper and a basket of chopped leeks to the leek shorbay broth and let the food fit perfectly.

You can also use potatoes in leek shorbay by washing and chopping it and adding vegetables to the food.
This food does not have tomato paste and has a special color due to the presence of vegetables and turmeric. If you like to add saffron or paste to it, just be careful to add the paste to the food at the end and fried.
Leek shorbay usually does not have minced meat and its ingredients are eaten with water. But you can serve it like a simple broth.
Instead of Omani lemon, you can use lemon powder or Ghora powder as well as lemon juice.
