INGREDIENTS :

  • Medium eggplant = 4 pcs
  • Minced meat = 250 grams
  • Onion = 2 pcs
  • Garlic = 2 cloves
  • Chopped parsley = 4 tablespoons
  • Barberry = 2 tablespoons
  • Chopped walnuts = 4 tablespoons
  • Tomato paste = 2 tablespoons
  • Tomatoes = 2 pcs
  • Salt, pepper and turmeric = as needed
  • Oil = as needed

INSTRUCTION :

Peel the eggplants in stripes (pajamas) lengthwise, but do not cut the eggplants (because of the cohesiveness and beauty). Then we cut them in half lengthwise and empty them inside a little so that the material moves. We remove the eggs because of their bitterness.

Then we sleep in a solution of water, salt and lemon for 30 minutes until it becomes bitter, then we squeeze them and dry them with a clean towel and fry the eggplants in oil on both sides and set them aside.

In the same frying pan, fry the chopped onion and garlic, add the turmeric and pepper, and pour the minced meat on top of each other and fry.

Add the chopped walnuts, sauteed parsley and barberry and mix well. Fill the ingredients inside the eggplants that we emptied.

Now we have two cooking methods: 1- Cooking method on gas: Put the eggplants in a pan and mix a little water with the paste and a little oil and pour it into the pan and put it on a very low flame with the lid closed for 20 minutes (until the juice is drawn) until it falls and then We serve.

2- Baking method in the oven: Put the eggplants in an unbreakable or fireproof dish and mix a little water with the paste and a bit of oil and pour it into our dish.

Other points
If you use meat juice instead of water when preparing the sauce, your food will be delicious.
If you have excess liquid in your meat, empty the inside of the tomato, fill it with the ingredients and put it next to the almonds.
This food is served mainly with bread and vegetables.
