Tabrizi kofta recipe Tabriz food in Iran

INGREDIENTS :
- Chickpeas = 100 g
- Plum = 10 pcs
- Onion = 1 pcs
- Rice = 200 grams
- Eggs = 2 pcs
- Boiled eggs = 3 pcs
- Meat = 500 grams
- Walnut and barberry = the amount needed
- Barberry = the amount needed
- Salt and pepper = the amount needed
- Tomato paste = 1 tablespoon
- Vegetables (including savory, tarragon, mint and parsley) = 50 grams
- Chickpea flour = 50 grams
INSTRUCTION :
Boil the rice and cobs in separate bowls until the water is completely absorbed, then grind them and mix them with the minced meat.
Add chickpea flour and spices and mix the chopped greens and eggs with the ingredients.
Continue adding chickpea flour until your ingredients are thick and firm.
Take some of the prepared Kofta material and round it and make a hole in it by hand pressure and put fried barberry, walnuts, soaked plums and a quarter of a boiled egg in it and round the Kofta again.
Now choose a dish and fry onion in it and pour tomato paste, saffron and the remaining amount of barberry in it and add one or two cups of water to it.
Put the prepared kofta in boiling water and let it cook for 50 minutes.
Other points
If the Kofta substance is well hardened, it is very unlikely to fall off.
Be sure to place the koftas in boiling water to prevent them from collapsing.
To make Kofta juice more delicious, you can use some plums, lemon powder or Omani lemon or plum paste.
