Another ingredient that is part of the food culture in Bushehr and the south of the country is tamarind, which is one of the main ingredients of yatimak and gives it a very delicious taste along with eggplant. The main feature of this dish is that it is spicy, which is what most southern dishes have.

INGREDIENTS :

  • Eggplant = 4 pcs
  • Onion = 1 pcs
  • Black-eyed pea = 1 cup
  • Tamarind water = half a glass
  • Salt, pepper and turmeric = as needed
  • Water = 1 glass
  • Oil = as needed

INSTRUCTION :

Cook the black-eyed pea.
Change the water twice during cooking to remove the puffiness of the beans.
Now in a pan, chop the onion and heat until light.
At this time, peel the eggplants and put them in salted water to remove the bitterness.
Then wash them and cut them into cubes.
Add the eggplant to the hot onion and season with salt, pepper and turmeric. Let the eggplants fry in a little oil.
Then add a glass of water to the ingredients and heat for half an hour to soften the eggplants.
Soak half a small packet of tamarind in half a glass of water and strain it after half an hour.
Pour the black-eyed pea over the eggplants and add the Indian stamp juice.
Be careful not to add salt to food because it is salty. Preferably add salt at the end of cooking.
