Delicious Iranian recipe for barberry and apricot meatballs

Despite all the new and varied foods that we hear these days and sometimes wonder at their weird names, authentic foods have a special feel that can not be found in any of them. For this reason, today I put a really delicious Iranian food that is prepared very easily and quickly, contrary to misconceptions.
ingredients :
- Medium apricots = 3-4 pieces
- Minced meat = 300 grams
- Cooked rice = 1 cup
- Grilled cobs = 4 soupspons
- Whole eggs = 1 piece
- Egg white = 1 piece
- Grated onion = 1 piece
- Barberry = 2 soupspons
- Chopped walnuts = 2-3 soupspons
- Aromatic herbs (basil and savory) = 3 soupspons
- Hot onion = 2-3 soupspons
- Tomato paste = 3 soupspons
- Liquid oil = as needed
- Salt, pepper and turmeric = as needed
Instruction :
Chop the apricots and put them in a suitable dish. Add onion, washed barberry and chopped walnuts. Mix the ingredients well to prepare the middle of the meatballs, then set it aside.
In another bowl, combine the minced meat, grated onion, herbs, whole egg, extra egg white, cob, rice, salt, pepper and turmeric and knead for about 5 minutes to find the necessary stickiness.
Take some of the meat mixture and hollow it out, then pour some of the apricot mixture into it. Dip your hands in cold water and gently roll the meatballs. The approximate weight of each meatball should be about 200 grams.
In a suitable saucepan, fry the oil and paste a little, then add 3 glasses of water and wait for it to boil. Turn down the heat and gently place the meatballs in the pot. Be careful not to put the lid on the pot as the meatballs will crack immediately.
When one side of the meatballs has set, gently turn them over and let the other side cook. If the meatballs need more water, add a little warm water to cook thoroughly. Wait for the meatballs to be ready and make a thick sauce.
Pour the meatballs into the desired dish and serve.
