Delicious recipe for pistachio and pomegranate cake
Icing pistachio and pomegranate cake is very simple. You can prepare it with just some yogurt and sugar. Of course, do not use sour yogurt in any way. Your yogurt should be sweet and not salty. Use the simplest yogurt. Of course, creamy yogurt can also be used. For the design, you only need a little pomegranate juice and pomegranate seeds.
ingredients :
- Pistachio kernel = 1 cup
- Sugar = 3/4 cup
- Oil = 2/3 cup
- Eggs = 2 pcs
- Vanilla = 1/2 teaspoon
- Yogurt = 1 and 1/2 cup
- White flour = 2 and 1/2 cup
- Baking powder = 2 teaspoons
- Salt = 1/2 teaspoon
- Pomegranate = 1 piece
For icing:
- Powdered sugar = 2 cups
- Plain yogurt = 3 and 1/2 tbsp
Instruction :
1- Turn on the oven at 162 degrees Celsius and let it heat up. Grease the bottom of a 24 cm belt mold with butter and sprinkle a little flour.
2- Powder the pistachios in a food processor or mill. (You can also use ready-made pistachio powder to prepare pistachio and pomegranate cake)
3- Pour sugar and oil in a mixing bowl and stir for 2 minutes until the sugar dissolves in the oil. Then gradually add the eggs and vanilla and continue to stir.
4- Mix salt and baking powder with flour. Add it in two or three steps. Do not use an electric mixer anymore at this stage. Add pistachio powder and mix.
5- Bake the pistachio cake in the oven for 50 minutes. Test it with a toothpick or fork to make sure it is cooked. If it comes out clean from the cake and nothing sticks to it, your cake is ready. After 5 minutes, take it out of the mold and place it on the cooling grid to cool.
Pistachio cake decoration method:
1- Sift the powdered sugar and pour it in a bowl. Then add the yogurt and beat well with a mixer until completely smooth.
2- Pour the prepared yogurt icing in the middle of the pistachio cake and carefully guide it to the sides so that it falls down from the edges of the cake.
3- Pour pomegranate juice with a dropper or teaspoon in different parts of the cake surface. Then take a toothpick or a wooden skewer and create a design with the tip on the icing. Just draw it on the cake in the shape of the English number 8.
4- Pour the pomegranate seeds around the cake. If the icing is too loose, put the pistachio and pomegranate cake in the refrigerator for a while and then cut.

– For icing, it is better to use yogurt that is slightly thick and not sour.
– You can also stick pomegranate seeds to the cake wall. If the seeds do not stick to the icing, first put the cake in the refrigerator for a while. And when the icing has cooled, repeat.
