Step 2: Make pistachio nectar
At this stage, in a suitable bowl, mix a little sugar, water, rose and cardamom powder. Then put the dish on the gas flame and stir constantly until the sugar dissolves well in the water and a thick nectar is obtained and the pleasant aroma of rose and cardamom wafts into your home.
Step 3: Combine pistachio powder with nectar
Now let the nectar you made in the previous step cool down a bit. Then pour the ground pistachios in a medium bowl. Then add nectar little by little and mix until it becomes a paste and reaches the desired adhesion.
Step 4: Pour the pistachio nuts into the mold
Cover the bottom of a rectangular dish with cellophane or greaseproof paper, then spread the pistachio mixture you made in the previous step to the desired thickness on the bottom of the dish and with the bottom of a spoon or with the palms of your hands or with a rolling pin, mix well. Press until the pistachios are smooth and cohesive. If you wish, pour some pistachios on cellophane or greaseproof paper for decoration before pouring the pistachio mixture into the bowl. Refrigerate the pistachio nuts until well firm.
Step 5: Cut the pistachio nuts
To cut the pistachio nuts, after removing the dish from the refrigerator, cut it into a rhombus with a wet knife. To have rhombic cuts, it is enough to make oblique cuts from right to left and vice versa on the whole lozenge. You can also pour the pastry dough into a silicone chocolate mold.
