ingredients :

  • Rice = 4 cups
  • Medium eggplant = 3 pieces
  • Hot onion = 3 soupspons
  • Large mushrooms = 3 pieces
  • Medium onion = 1 piece
  • Sour lemon = 1 piece
  • Barberry = 3/4 cup
  • Yogurt Abstract = 1 measure
  • Agar agar powder = 1 tablespoon of jam
  • Brewed saffron = as needed
  • Cardamom powder = 1/2 teaspoon
  • Rose water = 2 soupspons
  • Salt and pepper = as needed
  • Oil = as needed
  • Sugar = as needed

Instruction :

Wash the rice and soak it in some water and a little salt for about 2 hours. Wash and peel the eggplants, then chop into rings. Pour a little salt on them and wait for about 2 hours, then wash the eggplants, dry them and fry in some oil. When frying, add some salt and pepper to the eggplant slices.

Wash the mushrooms and chop them into slices. Finely chop the onion and fry it in a pan with some oil. When the mushrooms are juicy, add the lemon juice and some salt and pepper and stir gently, then remove the pan from the heat.

Pour the agar powder on 3 tablespoons of water and set aside for a few minutes. Pour the yogurt extract into a bowl and stir it a little to make it smooth, then add salt, agar, saffron, cardamom and rose and stir. If the bottom of the crease is thick, add some water.

Wash the barberry and pour it into the strainer to dry, then fry in some oil with a little sugar. Pour some water into a saucepan and bring to a boil, then add the soaked rice. Wait for the rice to boil with the water and soften a little, then pour it into the drain.

Grease a suitable Teflon pot or mold with a little oil. Add some rice to the topping, mix well, then pour into the pot. Then put the fried eggplants on it. Spread the onion on the eggplants. Now pour a few scoops of plain rice on the ingredients and smooth the surface, then place the mushrooms on the rice.

Pour some barberry on them (keep some barberry for decoration). Finally, pour a layer of plain rice on the ingredients and press it with the back of a spatula. Put the pan on the heat to cook the rice and your tahchin is ready.

Once the tahchin is ready, return it to a suitable container, garnish with barberry and serve.
