This delicious and fragrant dessert called Faloodeh is a local and traditional dessert in Shiraz, Iran, which is cooked as follows, and follow the cooking article of Koolleh magazine in the continuation of this article.

INGREDIENTS :

  • Flower starch = 200 grams
  • Water = 2 glasses

Ingredients for Faloodeh Syrup:

  • Sugar = 300 grams
  • Water = 1 glass
  • Sour lemon juice = 1 teaspoon

INSTRUCTION :

To prepare the syrup, put sugar and water on the heat to thicken. For Shirazi faloodeh syrup, the last drops of the juice that we have on the spoon should be difficult to separate from the spoon, then at the end, add a teaspoon of lemon juice. Then put it in the freezer to cool.

Mix the water and starch and let it sit for half an hour until the starch settles and take out the water on it which is sour starch water and throw it away.

Then we add the equivalent of the amount of water that we took out to the starch and stir it constantly with medium heat until it forms a porridge. It takes about half an hour for it to harden. From that milky state, it becomes clear.

Then we put it in a metal drain and squeeze it with the back of a spoon.

Take the noodles out of the ice water and immediately put them in the freezer to reach the freezing we want. Then take the cooled syrup out of the freezer, immediately pour the noodles into it and mix it quickly to make the noodles brittle. Then put it in the freezer to cover itself.
And use it with the flavors of cherry, lemon or saffron syrup.

Other points:
If you want to use the saffron flavor, you can use the water you used for the syrup instead of rose water.
