Referring to the doubling of the production of farmed caviar this year, he said: Last year, about two and a half tons of farmed caviar were produced and exported.

Increasing the demand for investment in the establishment of sturgeon farms
The official in charge of the Fisheries Organization of Iran said: Due to the increase in the dollar rate and the subsequent significant increase in caviar rates, the desire of private sector investors to produce more caviar has increased by creating more farms for sturgeon farming.

Regarding the production of sturgeon meat, Abdul Hai said: Since the beginning of this year, 2,500 tons of sturgeon meat have been produced, which is expected to increase to 3,000 tons by the end of the year.

According to the Deputy Minister of Aquaculture of the Fisheries Organization of Iran, due to its popularity in the export sector, the elephant fish species has the highest production among other sturgeon species in breeding centers and more focus on the production of this sturgeon species in the centers. According to him, most of the sturgeon farms are active in Gilan, Mazandaran and Golestan provinces, but in other non-coastal parts of the country, sturgeon farms have also been licensed, which indicates the development of this part of the aquaculture industry in Country level.

The Deputy Minister of Aquaculture of the Fisheries Organization of Iran also announced the cooperation of the Foundation for the Underprivileged with the fisheries departments of Gilan, Mazandaran and Golestan provinces to establish at least five sturgeon farms in each of the northern provinces and acknowledged: Soon we will see an increase in large farms. He pointed out that soon we will see the establishment of sturgeon breeding centers by the private sector, said: Currently, sturgeon fry are produced in breeding centers affiliated to the Fisheries Organization of Iran and distributed among fish breeding centers.
