Ilam Wild leek stew recipe in Iran

INGREDIENTS :
- Mutton or beef = 400 grams
- Sauteed leeks = 500 grams
- White beans (you can also use red beans) = half a cup
- Medium and chopped onion = 1 pcs
- Lemon powder = as needed
- Salt = as needed
- Red pepper = as needed
- Turmeric = as needed
- Oil = as needed
- Saffron (optional) = as needed
- Potatoes (for frying and garnishing) = 3 pcs
- Tomatoes = 2 pcs
INSTRUCTION :
In a suitable bowl, pour a little oil and fry the chopped onion in it until it is half golden. Add the meat to the onion.
After about 5 minutes, add turmeric and white beans (be sure to soak the beans from the night before and change the water twice).
After frying a little, add about half a liter of water and let the water boil. Lower the heat and let it cook well.
In a separate pan, pour a little oil and add the sauteed leeks and parsley and cook for about 10 minutes.
When the meat is cooked, add the fried leeks and add salt. In the last 5 minutes, add lemon zest or 4 Omani lemons to the stew.
After a quarter, turn off the stew. Peel a squash, grate it and fry it. Add the tomatoes and fry them as a garnish. You can also add dehydrated saffron to the stew, and if the pickle is not suitable, add a little juice or lemon juice to the stew.
