Kerman Kolompeh Sweets in Iran
Kolompeh is a traditional pastry of Kerman province that is cooked in other cities today. The Kolompeh looks similar to the Sistan pancake, with a mixture of date palm along with cardamom powder and other flavors. Dates, wheat flour, walnuts and oil are the main ingredients. Kolompeh is usually used for decoration of pistachio or sesame.
Kolompeh has traditionally been cooked by Kermanian women using local oil, Kerman palm dates and firewood.
Traditional Kolompehs were made by hand and had a simple appearance. Nowadays, industrial Kolompeh has become one of the main approaches of Kerman, which is usually cooked in workshops and in the oven. They are used in a variety of molds and are manufactured in various types of walnut, sesame, pistachio and mussel.
