Shirazi peach kofta is the local food of Shiraz from Iran. This kofta has no peaches and the name is probably due to the similarity of the size of the kofta with the peach.

INGREDIENTS :

  • Minced meat = 300 grams
  • Grated carrots = 300 grams
  • Eggs = 1 pcs
  • Medium grated onion = 1 pcs
  • Salt and turmeric = as needed
  • Chickpea flour = as needed
  • Sugar = 1 soupspons
  • Lemon juice = 1 soupspons

Ingredients for meatballs:

  • Large onion for hot onion = 1 pcs
  • Walnut – Raisins – Bukhara plum (without kernels) – Saffron = as needed.

INSTRUCTION :

First, mix the grated onion with the minced meat, pour the grated on it, add the necessary amount of spices and knead thoroughly. Take some of the prepared yeast and pour it into boiling water with a little hot onion (to prepare kofta sauce).
Add the chickpea flour to the sourdough and knead, break the egg into it and knead again, and gradually add the chickpea flour to make it cohesive.
Take a medium-sized peach, open it and put some onion, walnuts, raisins and prunes in the kofta and roll it.
We must make sure that there are no holes, air or gaps between the meatballs, because it goes and opens.
Then pour the prepared meatballs into the pot and leave the top of the pot half open so that the meatballs do not open.

For the color and taste of this kofta, we use brewed saffron.
Add lemon juice, sugar and saffron and let it simmer over low heat. After an hour, our Shirazi peach kofta is ready.
