Nazkhatoon pickle recipe for Mazandaran food in Iran

INGREDIENTS :
- Grilled eggplant = 2 pcs
- Vegetables (mint, tarragon, basil, chives) = the amount needed
- verjuice = the amount needed
- Garlic = 2 cloves
- Walnut = the amount needed
- Salt and black pepper = the amount needed
INSTRUCTION :
First, grill the eggplants and put them in cold water for 5 minutes to make them easier to peel.
Now puree the grilled eggplants with a mixer or shredder.
Pour the eggplants into a bowl and add the local basket, which contains the local basil, also known as Nazkhatuni basil.
Peel a squash, grate it and add it to the eggplant and greens.
We chop or puree walnuts and add them.
Now add verjuice to reach the desired concentration.
Add salt and black pepper to your taste buds.
Other points
You can not use optional walnuts.
If local basil is not available, you can use green basil.
For black pepper, you can add it according to your taste or not.
