Recipe aush nettle Mazandaran Iran
Nettle aush or sour aush is one of the traditional foods of Mazandaran cooked in Iran. Despite the legumes, the food in question is rich in plant protein, which is delicious due to the presence of squash and fragrant vegetables.
INGREDIENTS :
- Eryngium planum = 4 packs
- Garlic, coriander and dill = 1 pack each
- Salt, pepper and turmeric = as needed
- Red beets = 4 pcs
- Froriepia subpinnata = 2 packs
- Nettle = 500 g
- Chopped pumpkin = half pcs
- Chickpeas, beans, lentils with beans and lentils = 100 grams each
- Soaked rice crumbs = 250 g
- Pomegranate paste = 2 cups
- Onion cedar = as needed
INSTRUCTION :
Cook beans and beans separately. Boil the red beets separately and then grate them.
In a larger bowl, fry the turmeric in a little oil and then cook the rice crumbs with four cups of water.
When the rice is glazed, add the stewed vegetables along with the beans, beans and grated beets.
In the last step, add the chopped pumpkin, pomegranate paste and salt to the stew, and after the stew is completely set, put it in a bowl and decorate with hot garlic and onion.
