Recipe for fish gerdeh bij Gilan in Iran

ingredients :
- Salt and pepper = as needed
- Orange paste = 2 tablespoons
- Vegetables (including mint, coriander and sauteed parsley) = 2 tablespoons
- Onion = 1 piece
- Garlic = 1 plant
- Walnut = 50 grams
- Fish (preferably white) = 1 piece
- Small stones = 2 glasses
- Oil = 2 tablespoons
Instruction :
First we clean the fish and open its belly a little and sprinkle with salt and pepper. Remove the egg and set it aside.
Then we wash the fish and tie the head and tail of the fish with some thread so that the fish becomes a circle.
Peel a squash, grate it and fry it with onions and greens. Grind walnuts and add to vegetables along with orange paste. Then we fill the belly of the fish with fish caviar (if desired) and other ingredients.
Then put the washed stones in a suitable pot or bowl and put the fish on the stones and pour two tablespoons of water on the stones and put it on a gentle heat until the fish is cooked with steam.
Other points
1) If you do not have orange paste, use plum paste or sour pomegranate paste.
2) This food can be cooked in a frying pan with a little oil and without stones.
3): Gamoj is an earthenware dish that is placed directly on the flame and the people of Gilan use it for cooking and stewing.
