This pickle stew is a genuine food of Rostamabad in Gilan in the north of Iran and it is completely vegetarian and it is excellent for those who are vegetarians. If you try this food once, its taste will not leave your tongue and this will not be the last time. You like this local food.

ingredients :

  • Garlic = 3 cloves
  • Tomatoes = 2-3 pcs
  • Tomato paste = 2 tablespoons
  • Wheat flour = 3 tablespoons
  • Eggs = 2 pcs
  • Water = 4 glasses
  • Salt and Angelica = the amount needed
  • Chopped coriander = 2 tablespoons
  • Chopped mint = 2 tablespoons

Instruction :

First, pour a little oil in a bowl and add the garlic and add the garlic and fry.

Then peel the tomatoes, eat them and add them to the garlic, add a little salt and put the tomatoes in a bowl to cook.

While the tomatoes are cooking, mix the flour with 4 glasses of good water and set aside, then saute the coriander and fresh mint.

After the tomatoes are cooked, add the tomato paste and fry well

Then add the water and flour mixture to the food and stir constantly so that the flour does not become lumpy.

When the food reaches the boiling stage, lower the flame until it falls, at this stage, add the sauteed mint coriander and measure the salt.

When the food settles and the raw smell of flour disappears, beat the eggs in a bowl and add it to the food, do not beat anymore and put it in a bowl.

After a few minutes, divide the boiled eggs into smaller pieces and finally add a little angelica to the food.

tip:
To prevent the flour from becoming lumpy, mix the flour with cold water and stir carefully. This food is served with both bread and rice, and in fact it depends on your taste, but in the main recipe, it is served with bread.
