This delicious and fragrant food called Sumaq Qategh stew is a local food in Gilan, Iran, which is cooked as follows, and follow the cooking article of Koolleh magazine in the continuation of this article.

INGREDIENTS :

  • Oil = the amount needed
  • Onions = 4 pieces
  • Meat (1 kg of lamb with bones and half a kilo of beef) = 1.5 kg
  • Sumac = 3 soupspons
  • Lemon powder = 1.5 soupspons
  • Potatoes = 4 pieces
  • Salt and pepper and cinnamon = the amount needed

INSTRUCTION :

First, chop the meat to the size of a stew and wash and set aside. Grate or chop the onion, pour it in a suitable pan and fry it, then pour the meat in it to be fried with the onion so that the color of the meat completely returns.

Then pour the meat and onion mixture into the pot and add 1 to 2 glasses of water to cook the meat.

Sift the sumac twice and dissolve it in a bowl containing some boiling water that holds the sumac up to a fingertip and pour it into the stew. Then add Omani lemon powder, salt, pepper and cinnamon to the stew and put it on a gentle heat until the stew melts into oil.

Chop the potatoes and fry them separately in a pan and finally put them on the meats so that they are cooked.

Other points
1) This stew is very tasty and is cooked sour, of course you can increase or decrease the amount of sumac and lemon powder.
2) It is better to serve this food with cat.
3) If you like, use chicken instead of meat in the stew.
4) If you want, add some carrots to the stew to make it a little smooth (if you do not like sour food).
