INGREDIENTS :
- Green Pea = 1 cup
- Fresh dill = half a kilogram (dry dill can also be used.)
- Rice = 4 cups
- Tomato paste = 5 tablespoons
- Saffron mixed with hot water = a little
- Minced meat = about 600 grams
- Onion = 2 pcs medium
- Salt and pepper: as needed
- Oil = a little
- Fresh garlic stalks or garlic cloves = a few pieces as desired (soaked in water and peeled and finely chopped or grated)
- Mixed and aromatic spices = 1 tbsp
INSTRUCTION :
1- Separate the peas from the pods and seeds and wash and set aside.
2- Clean the rice and soak it with salt for 2 hours. Clean the dill and soak it in water several times and change the water and wash it well and let the water go and then chop it. Chop the lean beef, which is suitable for minced meat, into small pieces and wash it.
3- Peel an onion and fry it in oil and add the meat and fry it again a little to change its color. Meanwhile, add some spices and saffron and then tomato paste and cook it with a little water. The minced meat cooks sooner.
4- After cooking the meat, now add the cooked peas and measure the salt and pepper (with lemon juice). Taste it and turn off the water when it boils. The more you add the paste, the more it harmonizes with saffron and dill and becomes more colorful.
5- Boil water and pour rice and cook and then drain. Dill and garlic can be added to boiling rice water at the last minute, or you can add garlic and dill after draining the rice and when pulling it into the pot layer by layer with the cooked ingredients.
6- You need a little saffron and hot oil along with butter or animal oil to cook rice. This dish is usually served with a variety of pickles and fresh oranges or Shirazi salad.
