Recipe for Shiraz Quince Qormeh Stew in Iran
Quince Qorameh Shiraz stew is one of those very tasty and delicious dishes of this land. It is interesting to know that the people of Shiraz prefer sweet foods according to their taste. INGREDIENTS :
- Quince fruit = 1 large pcs
- Mutton = 300 grams
- Sugar = 2 tablespoons
- Onion = 1 pcs
- raw split peas = 1/2 cup
- Saffron mixed with hot water = 2 teaspoons
- Lemon juice = 1 tablespoon
- Turmeric, salt and pepper = as needed
INSTRUCTION :
Soak the split peas for a few hours and change them several times to prevent water bloating.
Finely chop the onion and fry in hot oil.
After the onion is golden, add the meat and let it change color and cook completely.
Then, add turmeric, salt and pepper along with 4 glasses of water to the onion and meat mixture and let the meat cook on low heat.
After the broth is half full, add the soaked split peas, along with the chopped peas and sugar and saffron to the food.
Then, add a little of the ingredients and allow the stew to cook well and so-called fit with a gentle flame.
In the last ten minutes of cooking, add lemon juice and then put the stew in a bowl and serve with rice.

Ghormeh stew to Shiraz can be served with bread in addition to rice.
