Bastikh or Lavazenak of Urmia is one of the very delicious desserts and souvenirs of Urmia that you can easily prepare and enjoy at home.

INGREDIENTS :

  • Flower starch = 150 g
  • Grape juice = 1 cup
  • Cardamom (powdered) = 1 teaspoon
  • Rose Water = 60 ml
  • Walnut kernels (chopped) = some to decorate

INSTRUCTION :

1- Pour the starch in a container, then gradually add 500 ml of water to it and open the starch with the back of a spoon so that it does not become lumps, then pass it through a strainer.
2. Dip the inside of a 30 x 20 cm tray in a little cooking oil with a cooking brush.
3- Pour the starch mixture into a pot, then add the grape juice to it. Put the pot on a low heat and stir constantly to thicken.
4- Add cardamom and rose water to it and continue stirring until the concentration of the mixture drops like yogurt. Remove the pot from the heat and pour it on the oven tray and smooth the surface with a spoon.
5. Sprinkle the walnut kernels on the pan, then press it lightly to stick to the pan and let it stay in the refrigerator for 2 hours to cool.
6- After this period, take the bastakh out of the refrigerator and cut it into equal pieces with a sharp and greased knife. Place the bashtakh in the desired dish and serve.
