September is the best time to harvest pistachios in the country

The results of a research show: September is the best month for pistachio harvest as one of the strategic and important products of Iran.
In a study conducted by Naeimeh Mahdavi and Hamideh Fahimi, faculty members of the Faculty of Science, University of Tehran, three cultivars of Kerman pistachio were harvested in three stages of ripening in July, August and September and the percentage of reducing sugars Oligosaccharides, polysaccharides and their lipids were measured by spectrophotometry, thin layer chromatography and liquefied gas chromatography.
The results obtained in this study show: Almond pistachio has the highest amount of reducing sugar and in all three cultivars of pistachio the percentage of reducing sugars decreases during the development of ripening stages, while in almond cultivar did not change much in Hazelnuts are reduced.
Also, in this study, no difference was found between the polysaccharides in three types of pistachio, hazelnut and almond pistachios and no changes appeared during the ripening stages, but the lipid content of all three cultivars increased so that the lipid content increased. In the third harvest it was about four times as much as in the first.
It should be noted that the highest amount of lipids was observed in hazelnut cultivar, then almond cultivar and then in ram’s head.
In terms of lipids, hazelnut cultivar had the highest percentage of lipids and changes in lipid content in the maturation stages showed a rapid increase.
In the final part of this research, it is stated: Due to the changes that were observed in the ripening stages, pistachio harvest in September is recommended. Obviously, studies related to later impressions should also be performed.
