Stew Dill Ghormeh Mazandaran in Iran
Ghormeh dill is a delicious Mazandaran stew whose raw materials are red meat or chicken, dill and green tomatoes. You can serve this delicious stew with local kata, salad and yogurt.
ingredients :
- Chicken = 1 pcs
- Dill = half a kilogram
- Fried onion = 2 tbsp
- Plum (green tomato) = half a kilogram
- Sugar = 1 tablespoon
- Salt = the amount needed
- Pepper = the amount needed
- Corn flour = 1 teaspoon (optional)
Instruction :
Step 1: Wash the meat or chicken, slice it and fry it in a little oil and add two or three glasses of water to cook it completely.
Step 2: Chop the onion and fry it.
Step 3: Clean and wash the dill and chop it with a fine knife and fry it in oil.
Step 4: While the dill is frying, cut the green plum (green tomato) in half with a knife and remove the core and add to the dill.
Step 5: Then fry a little.
Step 6: After cooking the chicken or meat, add the plums and dill to the chickens.
Step 70: Let it boil for a few minutes on a gentle heat and add a spoonful of sugar to season it and remove the salt and pepper after a few minutes.
Step 8: If you like sour food, you can eliminate sugar.
Points:
1- Take a medium pot and heat it on the gas heat. Then fry the chopped onions with oil or butter. Then remove the onions from the oil.
2- Fry the chickens in the same pot and make them golden.
3- Roast the chopped dill for 2-3 minutes.
4- Make a slit on the vegetables with a knife or if you are bored, take the kernels and add them to the vegetables and fry a little, put the fried chicken and onion in a bowl and put it with 2 cups of boiling water, sugar, salt and pepper. Cook until the chicken is cooked through. Now wait for the stew to settle and sit in the oil.
This food is due to having green tomatoes and smooth sugar. If you want it to be sour, you can add orange paste or better juice. Do not chop the green tomatoes as they will be completely crushed during cooking and will not be visible in the stew. To make the stew look more beautiful and delicious, you can halve the green tomatoes or just peel them. Green tomatoes are rich in antioxidants and vitamin C and make the body resistant to infections and all kinds of diseases.
To thicken this food, you can use corn flour dissolved in cold water.
