These sweets are made in two traditional types of Yazdi and honey by the people of this province. The Yazdi pole consists of two parts known as the outer layer and the inner brain. The outer layer is the bread that is fried in plenty of oil and consists of wheat flour, milk, yogurt and egg yolk. Yazdi artist women apply this layer after frying in powdered sugar. The inner brain is made from a mixture of almond powder, sugar powder and cardamom. Honey pole is also slightly different from yogurt pole, a substance used as a sweetener. Honey is used to make honey pole instead of powdered sugar. Most people in Yazd province prefer this delicious and delectable meal in the evening with a cup of fresh brewed tea.
