koumaj is one of the delicious Hamadan sweets and souvenirs that is cooked in Mazandaran in a rather different way. In addition to Hamadan and Mazandaran, in other parts of Iran, different baking methods can be found.
In the preparation of koumaj, Mazandarani uses ingredients such as rice flour, eggs, sugar, turmeric, saffron, milk, vanilla, and rose water and sometimes uses wheat flour and cumin. Koumaj is usually served at parties with tea.
