Traditional grape storage
To preserve the grapes in the concave method, two-layer containers are made of mud and left to dry, then the grapes or any other fruit are placed inside it and then it is covered with mud in such a way that there is no duct for air to enter. It is not left and the flower pot is placed in a cool place away from sunlight and usually in the basement, whenever they want.
This method is also used by gardeners in the north of the country to store grapes, and in the spring season, when the country’s markets are full of fresh fruits, they bring grapes to the market with their original quality, and thus earn a good income.
We talked to King Abdul Manan, a resident of Kalkan district in the village of Posht Choob in Kabul province, who makes grapes every year, about how to make and store grapes this way. He says that in the first step, we mix the mud with white straw and pour water on it until it is ready to be molded, and we make special bowls from it, so that the grapes can fit inside it.
Vine growers pick the amount of grapes from their garden each month and move it into special molds that they make, he says.
Abdul Manan said about how to keep grapes in Kinge: I usually make two types of grapes, raisin grapes and tribal grapes, because the resistance of these two types of grapes is higher and we have to remove the rotten grape seeds before threshing so that it does not spoil the other seeds. .
According to Abdul Manan, The grapes that we prune become rotten when they reach that sunlight, or the wind has penetrated into them, or the grape seeds are spoiled before they are pruned.
Askar is another grape grower who makes about 10,000 to 20,000 grapes a year. He says, We harvest a large amount of grapes annually to store grapes until early spring, and in the winter or on the day and night of Nowruz, we extract them from the underground and sell each sugarcane for 100 to 150 afghanis, and thus earn a good income. We will get it.
He says they move a kilo of grapes inside each kennel.
This method is also part of their culture, as the vine growers of the north of the country earn a good income with Kangineh. Using this method, they celebrate ceremonies such as Yalda night and Nowruz night and day in a very special way.
