Kashmir is the city of golden raisins
Although Kashmir has been called the House of Dar al-Momenin due to the presence of the great Imams Seyyed Hamza and Seyyed Morteza,
but this city is also known as the Khorasan House Syrup.
The name of this city is Khorasan Syrup House because in the not so distant past, this city had many vineyards and thanks to its mild climate,
various fruit trees were grown and raisins of this city are almost world famous.
In fact, Kashmir is called Khorasan Winery thanks to its delicate grapes and unique raisins.
More than 22 grape cultivars are produced in this country.
The two cultivars Asgari and Pikami are special for the production of raisins,
and the two products Tifi and Moyez are also produced from cultivars such as Sahibi, Lal and Razeghi.
Kashmar has 3300 hectares of vineyards and the harvest from vineyards to produce raisins begins in the second decade of August.
Experts believe that 25% of grapes are eaten fresh in the city and neighboring cities,
75% of this product is converted into raisins, 20% is green raisins and 80% is golden or smoked in the local term.
Kashmir raisins, known as Qalami green raisins, are famous in Afagh and are requested by neighboring countries, especially Pakistan.
Kashmir grape crop is very effective in terms of employment.
According to the estimates of Kashmir Agricultural Jihad, 120 people – working days are created per hectare per year,
that is, one million and 58 thousand people – working days per year.
Kashmir grapes are unique due to their tenderness, sweetness,
maturity and being free from soil contamination and the cluster not coming into contact with the soil.
This product does not contain any toxin residues due to the lack of use of chemical pesticides in the planting and maintenance stages.
To prepare raisins, grapes are harvested from the second decade of August and after washing,
they are hung for 5 to 7 seconds in a solution consisting of potassium carbonate powder and green oil on frames with galvanized metal wires.
These frames are placed in a corner of the garden or in a roofed space called the garden house.
Of course, due to the efforts of centers such as Jihad Keshavarzi, the new garden houses have been built hygienically and with lattice walls.
On the wall of these spaces, at a distance of 10 cm, galvanized metal wires have been installed for hanging clusters.
However, in the old garden houses, the method of creating a pendulum and connecting it to the ceiling was used.
All operations of turning grapes into raisins should be done in the shade.
In this case, raisins retain their color. After drying, the above product is transported to the relevant factories for washing, brewing,
sorting and packing. The main feature of green raisins is that they can be stored in natural air. This product does not lose its taste in natural air.
In addition to producing green raisins, other types of raisins are produced in Kashmir.
Golden or California raisins are among these products.
Typhoid is another cultivar of raisins that is produced from seeded grapes such as Sabze Mal. Raisins are also a type of sun-dried raisins.
Herd also refers to clusters isolated from the cluster.
These berries are dried in the sun. This type of raisin is also called black raisin.
