barley barley is one of the local foods of Tehran province in Iran. This food belongs to Lavasan region, where a kind of local vegetable called Tabla is also used.

INGREDIENTS :

  • Oatmeal = 200 grams
  • Red beans, pinto beans and chickpeas in total = 150 grams
  • Water = 1 liter
  • Lentils = 70 grams
  • Vegetables (leeks, parsley, coriander, spinach) = 300 grams
  • Salt, pepper, turmeric and cinnamon = as needed
  • Hot onion = 2 soupspons
  • Mint = 1 soupspons
  • Rice = 100 grams
  • Yogurt Abstract = To decorate as needed

INSTRUCTION :

1. Soak cereals, except lentils, in water overnight. Then pour into a strainer to remove excess water. Now add a liter of water and put it on the stove.

2. When the water boils, turn down the flame and after an hour, add the lentils along with the washed and chopped vegetables and wait for the beans to cook.

3. Then add spices, hot onion and hot mint. When the water is cooked, add the washed and soaked rice and stir slowly until all the water is absorbed.

4. Now wait until the rice is completely cooked, then put the tail in a bowl and garnish with yogurt.
